Ivory Spring is a light-roast single-origin coffee from Flores, Indonesia, with an unusually bright expression for Indonesian coffee.

Green apple brings a fresh, crisp note to the cup, driven by pronounced acidity that remains remarkably clean and balanced rather than sharply sour. A delicate cashew note follows with a softer nuttiness, while a creamy mouthfeel gives Ivory Spring unexpected weight and roundness for such a bright coffee.

The result is a coffee of contrasts: high-acidity yet smooth, crisp yet creamy, distinctly Indonesian yet unlike what many expect from the origin.

Ivory Spring is built around a contrast we don't often find in the same cup.

Its acidity is unusually pronounced for an Indonesian coffee, giving the cup freshness, energy, and definition. But high acidity doesn't mean sour. Here, it reads as crisp green apple—a clean brightness that keeps the cup lively without becoming sharp.

Then comes cashew: lighter and more delicate than a traditional roasted-nut flavor, bringing subtle sweetness and softness.

What makes Ivory Spring particularly unusual is the mouthfeel. Its creamy texture creates roundness beneath all that brightness, bringing two qualities that can seem almost contradictory into the same cup.

The result is unusual, but remarkably harmonious.
